It’s great when we are in the middle of a snowy, bone-chilling winter and craving a warm hearty bowl of gooey goodness. This dairy free and healthy broccoli soup recipe is super quick and easy to make. With a bowl of soup in hand, sitting by the window and reading our favorite book – isn’t that an awesome way to relax and recharge?

But hey, don’t turn away thinking that we are going to stir in some dairy ingredient which you are intolerant to and hence, it’s not for you! It is for you, baby! With all the fantastic dairy replacements flanking the grocery store aisles these days, there is no dead-end for dairy-free soup aficionados.
Did you think only heavy whipping cream or just plain milk is the core creaming ingredient of a soup? Think again! Because I’m going to take you on a joy ride of a slurpy and luscious bowl of Dairy-Free Broccoli Soup and I’m almost certain that you would be surprised at what you finally arrive at when we put together all the ingredients that we have!

A very pertinent question indeed! Ok so here’s a quick round down on what you need to lay your hands on.

Ingredients and Tools You Need:
What would a Broccoli soup be without adding the Broccoli!! You could do 2 cups or more if you please.
I love you Garlic! 1-2 cloves of this, please
Onion, 1 big one or 2 small-sized ones, because caramelized onions would bring in great flavors
½ cup of vegetable broth. Take out some time and prepare the veggie broth at home. This is a great way to use up all the leftover vegetables in your crisper and a low-in-sodium option too!
Freshly ground black pepper and sea salt if you prefer
Ok, now the magic dairy-free coconut milk {I prefer lactaid milk, btw}
Care for some fresh parsley or basil, sprinkle some on top before gobbling it up!
2 tablespoons of olive oil
Ok, can’t wait anymore, let’s get to making this wonder, should we?
Patience my friend, wait till the blending gets over, it would all be worth the toil!
Broccoli Soup Recipe
Chop 2 cups of broccoli and one onion. Toss into a large pot of water. Bring the water to a boil. Let it simmer under medium heat.
After 15- 20 minutes the vegetables should soften. Drain all the water from the pot.
This is where you break out your immersion blender or Vitamix {I can’t simply get enough of my Vitamix}. Pour the vegetables into the blender and add ½ cup of vegetable broth, 2 tablespoons of olive oil, ½ tablespoon of crushed black pepper. Start to blend until smooth. Add 1 clove of garlic and ¼ cup of milk alternative. Blend until smooth! And enjoy!
When you are done with all these stages pour this magic potion into a bowl and liberally sprinkle salt and freshly ground pepper.
Now you have a healthy bowl of delicious broccoli soup for lunch or dinner. Yummy!
