And what is Christmas without delectable treats, grandma’s recipe inspired feasts and melt in the mouth cakes. Oh, talking about cakes, I just recalled, what are your plans about baking this Ho-Ho season? Ok, I know, there is no Christmas without those yearly traditions of baking batches of Ginger Bread Muffins. Soon the familiar aroma of the GingerBread Man and Muffins is going to fill up our house, and I can't wait!

Ooh! The preparation and build-up to Christmas get me excited like a little child! And how about if I tell you, this recipe is perfect for my vegan friends too, sounds just about right.

What do you need to make Gingerbread Muffins?
Let’s break up the ingredients first.
Dry Ingredients
1 1/2 cups whole wheat pastry flour
1 1/2 teaspoons cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 teaspoon of baking powder
1/2 teaspoon nutmeg
1/2 cup of brown sugar
Want to make it extra special? Who will say no to that one!! Add the zest of orange {about 1 orange should be good} and about 1/2teaspoon of kosher salt.
Wet Ingredients
1/2 cup molasses
1/2 cup non-dairy milk {I could suggest Almond milk or Soy milk here}
1/3 cup of coconut oil
2 teaspoons vanilla extra
A bit of extra magic here, add 1 mashed banana for that gooey texture you have been looking for.
How To Make Gingerbread Muffins
Directions
The whole process of making magic muffins is no huge deal either. But I would say, whisk the wet and the dry ingredients separately and then mix in everything together gently. So, you are here mixing the pastry flour, cinnamon, cloves, ground ginger, nutmeg, baking powder, orange zest, and salt together in a bowl. Set aside. In another bowl mix the molasses, the almond milk, coconut oil, and vanilla extract together. Now slowly start whisking both sets of ingredients together. It’s a bit of an effort because the batter, by now has become quite thick. Put the batter into muffin pans and let cook in the oven for about 20 minutes. And before I forget to add, you got to preheat the oven at 400 degrees. And if you think that at this temperature the muffins would brown too much, use your best judgment to tweak the oven temperature. I believe, 375 degrees would be great too!
